Antimicrobiëlen van organische schillen van pecannoten remmen groei Listeria

05 februari 2014

Growers and processors of USDA certified organic foods are in need of suitable organic antimicrobials. Researchers at the University of Arkansas USA developed natural antimicrobials derived from an all-natural by-product, organic pecan shells. Pecan shells are a by-product of the shelled pecan industry.
They found that the solvent free extracts of pecan shells inhibited Listeria strains. The researchers concluded that the pecan shell extracts may prove to be effective alternative antimicrobials against food pathogens and supplement the demand for effective natural antimicrobials for use in organic meat processing. An article about the research is published in the Journal of Food Science.
