In a paper researchers at the University of Tehran in Iran review some recent developments in MAP technology for fruits and vegetables. The paper is published in the Journal of Applied Packaging Research.
Modified atmosphere packaging (MAP) is widely used for packaging fruits and vegetables. In MAP the air of the packaging headspace is replaced with a predetermined mix of atmospheric gases. Oxygen, carbon dioxide and nitrogen are the main gases used. Plastic films are widely used in MAP engineering and in many cases the plastic packaging films are combined with one another or with other materials such as paper or aluminum through coating, lamination, coextrusion and metallization processes.
